Combine oil, half the lemon juice, 1 teaspoon salt, 1/4 teaspoon pepper, and Italian seasoning. Marinate the chicken breasts with this marinade and leave in fridge for 30 mins.
Heat grill to medium-high and grill chicken breasts about about 5 to 7 minutes per side.
Combine tomatoes, garlic, basil, remaining lemon juice, and season with salt and pepper. Add 1 slice of mozzarella on top of each chicken breast while still on the grill until the cheese is melted. Add the tomato mixture on top and garnish with Parmesan.
Serve with mixed green salad
